Egg bake dishes are simple to whip up and can be crafted for breakfast, lunch, or dinner. This one is our favorite side dish for a Mexican theme meal.
Beat together :
8 eggs
1 cup sour cream
1/4 teaspoon salt
1/4 teaspoon onion powder
2 to 4 drops red pepper sauce ( hot sauce )
1 1/2 cups shredded cheddar cheese
1 1/2 cups Monterey Jack cheese or mozzarella
3/4 to 1 cup drained and chopped canned chilies ( or fresh roasted and skinned chilies )
Pour into a buttered or greased casserole dish and bake uncovered at 350 degrees for 45 minutes, till light golden brown and center is no longer runny. Stays hot a while, so let sit a few minutes before serving.
