MEATBALLS :
Ingredients : 2 lbs. ground beef
1/4 cup finely chopped onion
1 Tbl.spoon Worcestershire Sauce
1/4 tea.spoon pepper
1 tea.spoon salt
1/2 tea.spoon celery salt
1/2 tea.spoon dry mustard
Mix together until well blended. Kneed mixture a little, like you would bread dough.
Form into 1” – 1 1/2” balls ( use a small scoop or melon baler and your hands ) .
Brown meatballs in a large skillet. Drain excess fat.
Add : 1/2 cup coarsely chopped green bell pepper chunks
1 can(20 oz.) pineapple tidbits or chunks, drained ( reserve liquid for sauce )
Cook on medium heat and stir occasionally , while making sauce.
SAUCE :
Ingredients : 1/3 cup distilled vinegar
2 Tbl.spoons soysauce
reserved liquid from canned pineapple
1/2 cup brown sugar
2 Tbl.spoons corn starch, mixed with 3/4 water
Bring to a boil, stirring constantly. Boil 1 minute.
Add sauce to meatballs and simmer for 20 minute, stirring occasionally , while you cook rice.
Serve over cooked rice.
