This is our traditional Halloween cookie, but we make and eat them anytime of the year.
Ingredients :
2/3 cup butter, softened ( or margarine )
1 cup sugar
1 egg
1/3 cup buttermilk ( or 1 teaspoon lemon juice + 1/3 cup milk )
1 teaspoon vanilla
1 3/4 cup all purpose flour
1/2 teaspoon soda
1/2 teaspoon salt
1/2 cup baking cocoa
1 bag peanut butter chips ( I prefer Reese’s Peanut butter chips for Halloween )
Directions : ( Preheat oven to 400 degrees )
Mix together butter, sugar and egg. Stir in the buttermilk and vanilla. Mix together the flour, soda, salt and cocoa powder. Gradually add dry mix into buttermilk mixture, when well blended, stir in the bag of peanut butter chips. Chill in the refrigerator for at least an hour.
Drop walnut sized spoonfuls, three inches apart, on an ungreased baking sheet. Bake at 400 degrees for 9 to 12 minutes, until cookie center is slightly firm and no longer wet looking. Remove from pan after 1 minute to a wire cooling rack.
When cooled, cookies can be frosted for kids and wives, but I like them plain.
