3/4 cup mashed potatoes( only potato)

7-7 1/2 cups of icing sugar

2 t softened butter

1 t peppermint extract

6 drops green food coloring…mixings for candy

1T shortening

2 Cups chocolate…. topping ingredients

Place potatoes in large mixing bowl, drizzle with melted butter

add peppermint extract and food coloring.

Use a food mixer, adding icing sugar till smooth.

Line a 9x13 pan with aluminum foil.  Press potato

candy evenly on pan.

Melt shortening then spread over potato candy, refrigerate

until set.  Use the foil to lift the peppermint potato candy from pan

then fold the sides of the foil away from the candy.  Cut candy into

squares, makes 2 1/2 pounds of candy.
