1 Baked pie shell   3/4 cup sugar, can use brown sugar for richer color and flavor. 3 Tablespoons cornstarch mix together in in pan. in separate bowl , 3 egg yolks reserving whites for meringue  topping.   Combine sugar and cornstarch  in a heavy 3 quart pan.  Combine egg yolks and 2 1/2 cup evaporated milk and gradually add to dry mixture, stirring , cook over medium heat, stirring, to prevent lumps,  till thickened, let boil 1 minute constantly stirring. remove from heat and add 3/4 cup peanut butter 1 teaspoon vanilla, pour into shell, cover with meringue and bake in 350 degree oven till just browning, remove let cool and chill 3 hours. You may choose to chill the pie and top with whipped cream also:0 Chill 3 hours
