Ingredients :
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon ground cloves
2 egg ( well beaten )
2 cups pumpkin ( canned or home processed )
1 can evaporated milk
1 pie pastry ( for lining a 10 inch pie pan )
Directions : ( preheat oven to 425 degrees )
Mix together first five ingredients and set aside. To beaten eggs, add pumpkin and then canned milk. Blend until smooth, then gradually add to the dry mix and blend until smooth again. Pour into 10 inch pastry lined pie pan. Bake at 425 degrees for 15 minutes, then reduce temperature to 350 degrees and bake for 40 to 50 more minutes, until center is set up and a small knife inserted in the center comes out clean. I like my piece served with plenty of whipped cream !
