    Seems like we have a meal on a bun almost everyday.  An egg, cheese and ham breakfast bun, a hamburger lunch, a fish or chicken sandwich, Sloppy Joe or even “ a chocolate covered eggplant burger, ‘Scoobs’ “, as Shaggy would say to Scooby Doo.   All of which become a heartier meal on a homemade bun.

    Ingredients :

1-1/2  tablespoons active dry yeast

1-3/4 cups warm water (@ 110 degrees)

1-1/4 cups whole wheat flour ( or all purpose flour )

1/4 cup dry powdered milk

3 tablespoons sugar

2 teaspoons salt

1 tablespoon lemon juice

3 tablespoons melted butter ( or cooking oil )

3 1/2 to 4 cups all purpose flour

 

    Directions :  ( preheat oven to 375 degrees ).

Dissolve yeast in warm water, in a large bowl. Let stand for 5 minutes.

Add whole wheat flour , dry milk, sugar, salt, lemon juice and melted butter.

Then add 1 cup all purpose flour and beat until smooth.

Add enough remaining flour to form a soft dough. Turn out dough onto a floured surface.

Knead dough until smooth and elastic ( springs back a little when pressed ). ( about 5 minutes )

Place dough in a greased large bowl, turning once to grease top, cover and let rise for 1 hour or until doubled.

 

Punch down dough. With buttered hands, pinch off egg size balls of dough and place 4 inches apart (centers the of balls)

on greased baking sheets. Press balls flat for bun shape, but not touching each other. Cover and let rise 30 – 45 minutes.

Bake at 375 degrees for 15 –20 minutes. Remove from baking sheet and brush with more melted butter. Let cool on

wire racks before slicing.    Yield : 16 servings.
