   This is my grandchildren’s favorite summertime recipe.  They always ask for another slice.

 

Ingredients :

 

2 cups grated zucchini  ( I prefer the yellow type for it’s slightly milder flavor )

2 cups sugar

1 cup vegetable oil

3 beaten eggs

1/2 tsp. vanilla extract

1 cup plumped raisins ( optional ), to plump raisins, barely cover with water, bring to boil,remove from heat,let rest for ten minutes and then drain.

 

3 cups flour

1 1/2 tsp. baking soda

1/2 tsp. baking powder

3 tsp. cinnamon

1 tsp. salt

 

Directions :  ( preheat oven to 350 degrees, and grease 2 loaf pans )

Mix zucchini, sugar, oil, beaten eggs, and vanilla together. Also add raisins, if used.

Mix together the dry ingredients, then gradually add it to the zucchini mixture.

Pour into two greased loaf pans and bake at 350 degrees for 45 – 60 or until when a toothpick inserted into the loaf, comes out clean.

Remove from pan, to cooling rack, while still warm. Cool completely before bagging up, if there is any left !!!
