1/2 T yeast
2 T lukewarm water
1/4 cup sugar
2 T unsalted butter
1/2 t salt
3/4 cup scalded milk
1 large egg
1/4 t nutmeg
2 1/2 cup flour
Heat 2 T water dissolve yeast, let sit 5 min. ( I warm my bowl with hot water
a minute or so then pour out so bowl is warm)
In a different bowl..
Mix butter, sugar and salt well, add scalded milk
to mixture in bowl with butter , beat egg and nutmeg in separate bowl, mix together yeast mixture,
sugar and butter mixture, add beaten egg mixture. Stir in flour, 1 cup and stir till smooth, then add
1 cup and mix, then add the 1/2 cup mixing together then knead for 5-10 minutes.( better if 10 minutes)
put to rise 1- 1 1/2 hour in lightly greased bowl and cover with towel, rise in warm spot, or I heat
a bowl of water to very hot, put a cooling rack on the bowl then set my dough bowl on the rack and cover.
. Punch down then roll out 12 x 8 “ evenly , then
cut into 8 bars, and place on lightly floured platter, also warm environment, let raise for 30 minutes.
Lift each bar and lay top side gently into 350 degree oil first for the best looking bar, while frying @ 3minutes
each side, browning nicely.
Remove to rack to let cool completely on cooling rack. You may frost completely cool bars.
Icing: 1 cup pwdr sugar mix
in 1T maple syrup, you may make dble recipe icing if desired for very iced
maple bars.
